Taste Cameroon Community Enterprise CIC is a registered social enterprise whose aim is to promote social and economic development in Cameroon by helping to facilitate new opportunities for sustainable livelihoods, increasing and sharing skills and knowledge, supporting and assisting children and women, and encouraging meaningful exchanges to find solutions to contemporary issues.  Our organisation is a not for profit social enterprise incorporated under the laws of England and Wales. We have a not for profit branch in Cameroon, Taste Cameroon Dschang with all of the local knowledge and expertise to ensure that projects meet local needs.

Through years of experience in social, community and economic regeneration, we have learned that there are a lot of people who want to share their talents, knowledge and skills to not only help improve lives in their community but in communities around the world. We facilitate innovative collaborations to provide sustainable solutions to address poverty in Cameroon. But these collaborations will not only help Cameroon, they will help communities around the world.

The Challenge and Solution

The Menoua region of Cameroon is the breadbasket of the country providing fruit, grain, vegetables and meat throughout the land. It is particularly known for its pork, fruit and vegetables.

But farmers and vendors do not earn a sustainable living.  

Although cured meats like sausage and bacon are consumed, these goods are imported as local knowledge is lacking. By setting up a community cooperative to produce artisan charcuterie, we will be helping local farmers and butchers acquire new skills thereby increase their earning capacity. They will be able to make and sell products which are in demand locally.  Curing pork will also give it a longer shelf life thus reducing food waste and giving pork farmers a longer window to sell their pork or use to feed their family.

Fruit and vegetables are grown in abundance in the area primarily by women and they are not making a sustainable income on what they grow and sell.  In periods of abundance, what is not sold or consumed goes to waste. In periods of scarcity, there is not enough to sell to earn even a subsistence living and not enough to provide proper nutrition to the family. By setting up a cooperative for preserving vegetables and fruit, women will increase their income by being able to use all they produce and transform into sauces, pickles, jams and more. Food waste will be reduced, and there will be a continuous supply of fruit and vegetables to eat during seasons on scarcity.

 

In February 2018, we will be launching, Food for Prosperity,  an initiative that which will help develop the rural economy, reduce poverty and hunger and by setting up a community cooperative and provide training in butchery, charcuterie, and the preservation of fruit and vegetables. 

In order to avoid having individuals having to buy basic equipment to make charcuterie (sausage, bacon, black pudding etc), and fruit and vegetable preserves. We will set up the community cooperative with some basic equipment to get it started. Community members will be charged a small fee for using the equipment and this will be invested back into the cooperative to expand the facilities.

Food for Prosperity is just one of the projects that will be launched in the Menoua in 2018. It is part of the centenary commemoration of the town of Dschang, the first capital of the West Menoua Region.It is part of the centenary commemoration of the town of Dschang, the first capital Western Cameroon and the Menoua Region 

Dschang Fete Ses 100 Ans - CELEBRATING LEGACIES, HONOURING TRADITIONS, SHAPING THE FUTURE

The history, endeavours and legacies achieved by the people of Dschang and Menoua region dictate that we do not allow the 100th anniversary go unnoticed and pass without a worthy commemoration.

We will honour, with a variety of events, the food, beverages, history, music, sport, literature, environment, heritage and culture that makes Dschang so unique and special. At the heart of the events is the desire to contribute to the social and economic development of Dschang and the Menoua region long after the celebration is over.

Validation

This project has the support of all the Kings of the Menoua Region , Major of Dschang, Prefect, and the community at large in Cameroon and the Diaspora. 

What we are Crowdfunding

A team from Wales will go to the Menoua in February to train local people in the preservation of fruit and vegetables, charcuterie, and butchery .  To ensure the training is embedded in the community and continues after the team has left,  Candidates will be selected from all villages in the Menoua region and be responsible for training others.  A smaller follow up team will return later in 2018 to reinforce and follow up with training.

Angharad and Mark Underwood from the Preservation Society, CJS Electrical and Chepstow Rugby Club.  Angharad will lead on training in preservation of fruit and vegetables. Mark will be conducting initial research on projects to help develop training in building skills and rugby

 

 

Food Adventure – A company with a proven track record in facilitating training in all aspects of artisan  food production, development of training courses, marketing, and food event management

Glamorgan Small Holders - Expertise in Pig Husbandry

(3 people – 2 jam and vegetable preserves, 1 food safety and marketing)

30 people will be trained in charcuterie and butchery. 60 will be trained in the preservation of fruit and vegetables. Candidates will be selected from all villages in the Menoua and be responsible for training others.

Initial work will begin to establish partnership to ensure healthy pig herds.

Avec plusieurs années d'expérience dans le développement communautaire, nous avons appris qu'il y a beaucoup de gens qui veulent partager leur talents, connaissances et compétences non seulement pour aider à améliorer la vie dans leur collectivité, mais aussi dans les communautés à travers le monde. Nous facilitons les collaborations innovatrices pour fournir des solutions durables pour lutter contre la pauvreté au Cameroun. Mais ces collaborations n’aideront pas seulement le Cameroun, elles aideront les communautés à travers le monde.

Le défi et Solution

La Menoua du Cameroun, est le grenier du pays fournissant des fruits, des céréales, des légumes et de la viande pour la nation. Il est particulièrement connu pour sa viande de porc, fruits et légumes.

Mais malheureusement les agriculteurs et les fournisseurs ne parviennent pas à mener une vie confortable.

Bien que les charcuteries comme les saucisses et bacon sont consommés, ces produits sont toujours importés parce que les fermiers locaux manquent le savoir-faire pour en produire. La mise en place d'une coopérative communautaire pour produire de la charcuterie artisanale, aidera les agriculteurs locaux et les bouchers d'acquérir de nouvelles compétences et d'augmenter ainsi leur capacité de gain. Ils seront à mesure de fabriquer et de vendre des produits qui sont en demande au niveau local. Par exemple le séchage du porc donnera également une plus longue durée de conservation afin de réduire les déchets alimentaires. Les producteurs de porc beneficieront d’une fenêtre plus longue pour vendre leur porc ou utiliser pour nourrir leur famille.

Les fruits et légumes sont cultivés en abondance dans la région principalement par des femmes; et elles ne font pas de revenues durables sur les produits dont elles cultivent et vendent. En période d'abondance, ce qui n'est pas vendu ou consommé est disposé comme déchets. Dans les périodes de pénurie, il n'y a pas assez à vendre pour gagner même une vie de subsistance et aussi pas assez pour fournir une nutrition adéquate pour la famille. La mise en place d'une coopérative pour la conservation de légumes et fruits aidera les femmes à augmentent leurs revenus en étant capable d'utiliser tout ce qu'elles produisent et transforment en sauces, marinades, confitures et bien d’autres. Les déchets alimentaires seront reduits et il y aura un approvisionnement continu de fruits et légumes à manger pendant les saisons de carence.

 

En février, nous lancerons,  une initiative visant à développer  l'économie rurale, réduire la pauvreté et la faim. Une coopérative communautaire sera mise en place pour assurer la formation en boucherie, charcuterie, et la préservation des fruits et légumes.

Afin de limiter le besoin d’acheter de l'équipement primitif pour faire de la charcuterie (saucisses, bacon, boudin noir, etc.), et les fruits et légumes en conserve. La coopération communautaire sera fondee avec quelques équipements de base pour démarrer. Les membres de la communauté devront s'acquitter d'un petit supplément pour l'utilisation de l'équipement et ce sera réinvesti dans la coopérative pour agrandir les installations.

Nourriture pour la Prospérité, n'est que l'un des projets qui seront lancés à la Menoua en 2018. Il fait partie de la commémoration du centenaire de la ville de Dschang, première capitale de la région ouest de Menoua. Ce projet de validation a l'appui de tous les rois de la region de la Menoua, le maire de Dschang, le sous-prefet, le préfet, et l'ensemble de la communauté.

 

Ce que nous financons a travers le crowdfunding

 

Une équipe de Crowdfunding de Galles ira à la Menoua en février 2018 pour former des gens à la préservation des fruits et légumes, charcuterie, boucherie, etc... Pour assurer que la formation est intégrée dans la communauté et se poursuit après le départ de l'équipe de Galles, les candidats seront sélectionnés de tous les villages de la région de la Menoua et seront responsables de la formation des autres. Une plus petite équipe de suivi reviendra plutard en 2018 afin de renforcer et de donner suite à la formation.

L'équipe galloise sera composee de:

  • Le gagnant du prix BBC Food and Farming Awards Best Producer (2016/2017) Charcutier Ltd (3 personnes) de la boucherie et charcuterie

  • Food Adventure - une entreprise qui a déjà fait ses preuves en facilitant la formation sur tous les aspects de la production alimentaire artisanale, le développement des cours de formation, de marketing, de gestion des événements et de l'alimentation (3 personnes - 2 confitures et conserves de légumes, 1 de la sécurité alimentaire et la commercialisation)
  • 30 formateurs seront formes dans la charcuterie et boucherie. 60 formateurs seront formés sur la préservation des fruits et légumes. Les candidats seront sélectionnés à partir de tous les villages de la Menoua et seront responsable de la formation des autres.

Le montant nécessaire est de 13 000 €. Tout montant recueilli au dessus du montant requis contribuera à former davantage de personnes et d'acheter plus d'équipement.
